Peanut Butter & Chocolate Split Cookies

Peanut Butter and Chocolate go together.

Well, chocolate goes with pretty much everything.
Peanut butter?  Well, it depends on who you ask.

I needed to bake some cookies for my brother-in-law.
Who really likes my baking.

I ended up having more Chocolate dough than the Peanut Butter.
*Therefore, with the leftover dough, I added dried cherries to the mix and they became...
Chocolate Cherry Cookies.
They too were delicious.

You can taste the peanut butter side and you can taste the chocolate side.
Both work well together.

Picky-Palate  is where I got this scrumptious recipe from.
The cookies paired well with a tall, glass of milk (or strong cup of coffee).

Peanut Butter & Chocolate Split Cookies

Peanut Butter Cookie:   1 cup peanut butter (I used smooth)
                                      1 cup granulated sugar
                                      1 large egg
                                      1/2 cup mini-chocolate-chips, semi-sweet

*Mix all ingredients together in a medium-bowl; set aside.

Chocolate Cookie:   1 cup butter, room-temperature
                                 3/4 cup brown sugar, firmly-packed
                                 1 cup granulated sugar
                                 2 large eggs
                                 1 tsp pure vanilla extract
                                 1  3/4 cup all-purpose flour
                                 1  1/4 cup cocoa powder
                                 2 tsp baking soda
                                 1/2 cup semi-sweet chocolate-chips (regular size)
                                 1/2 cup white chocolate chips

* Preheat oven to 350F.
Line your baking sheet/pan with either parchment paper or Sil-Pat mat (I use this) and set aside.
* In a medium-bowl, whisk together (I use a fork) the flour, cocoa and baking soda.  Set aside.
* In a large bowl, beat together the butter and both sugars until light and fluffy.
* Add the eggs and vanilla; and beat for a minute longer.
* Slowly add the flour-mixture to the butter-mixture and mix until all is incorporated.
Please remember to scrape down the sides of the bowl and bottom of the bowl, to ensure everything is mixed together.

** Using a 1/2 Tbsp of dough,
(I worked 1st with the Peanut Butter dough and then the Chocolate dough)
I made the balls first. 
*Then I rolled the 2-balls together and placed on the lined baking sheet/pan.

OR

** Take either a 1/2 Tbsp or 1-Tbsp of the Peanut Butter dough and scoop out the dough.
*Roll into a ball.  Set aside.
*Repeat with the Chocolate dough.
*Then roll the 2-balls together and place on the lined baking sheet/pan.

* Bake for approx. 10 minutes or until the edges are golden. 
*Let cool on baking sheet/pan for 1-2 minutes before removing to wire-rack to cool completely.


** I got 37 Peanut Butter balls and way more Chocolate dough therefore, I made
Chocolate Cherry Cookies.
*  With the left over dough, I added 3/4 cup of dried cherries and mixed together.
*  Using the 1/2 Tbsp scoop, I rolled into balls and placed them on the baking sheet (or pan).
*  Bake at 350F for 8-minutes and let cool on baking sheet (or pan) for 1-minute before removing to a wire-rack to cool completely.


***Please Note:   I always use Salted Butter and then omit the salt requested in the recipe.
You should do what you feel is best.
