Banana Pudding Cookies

I don't remember how I came across this recipe.
Or what inspired me to bake a banana flavoured cookie.
Yet, my family and friends are glad that I did.

The recipe comes from one of my favourite blogs (I have many!).

Once you try the recipe, you'll wonder why you didn't think of them.
These cookies are easy to make, moist, great banana flavour and amazing.

Banana Pudding Cookies

1 cup butter (room temperature)
1/2 cup brown sugar
1/4 cup granulated sugar
1 pkg. banana cream instant pudding mix
2 large eggs
1 tsp pure vanilla extract
2  1/2 cups all-purpose flour
1 tsp baking soda
1 cup chopped vanilla wafer cookies
1 cup white chocolate chips

*Preheat oven 350F.
Line a baking sheet/pan with either Sil-Pat or parchment paper.
*Beat together butter and sugars until creamy.
*Add pudding mix, eggs and extract.
*In a separate bowl, stir together flour and baking soda. (These are your "dry" ingredients)
*Add the dry ingredients to the batter and mix only until incorporated.
*Stir in the wafers and chocolate chips.
*Using either a Tablespoon or teaspoon scoop, scoop out the dough onto the lined-baking sheets/pans.
*Bake for approx. 8-10 minutes (depending on your oven) or until golden around the edges.
*Let cookies sit on baking sheet/pan for approx. 2-minutes.
*Transfer to a wire-rack to let cool.



***Please Note:   I always use Salted Butter and then omit the salt requested in recipes.
You should do what you feel is best.
