Raspberry Cookies

These cookies are WOW!

These cookies appeal to almost all of the senses.
The swirl and the appearance of the white chocolate chips.
The smell of the cookies baking, mmmm........
The taste.

Everyone likes these cookies.
You will have people begging you to bake these.
Trust me.

There a few cookies I will make over and over again.
Raspberry Cookies are one of them.



*The first couple of times I used 1 1/2 cups of frozen raspberries.
However, using only 1-cup of frozen raspberries in my opinion works better.
You see more of the swirl, which makes the cookie very appealing.

*Yes, you must use Frozen raspberries.
I find they work better.

I have made them twice.
Once using white chocolate chips.
And once using semi-sweet chocolate chips.
Both are great.

Raspberry Cookies

3/4 cups (12 Tbsp) butter, room-temperature
1 cup granulated sugar
1 tsp pure vanilla extract
1 large egg
1 lare egg yolk
1/2 tsp baking soda
2 1/4 cups all-purpose flour
1 cup frozen raspberries
1/2 cup white or semi-sweet chocolate chips

*Beat the butter and sugar together until light and fluffy.
*Add the vanilla and beat again.
Scraping down the sides and bottom of the bowl with a rubber spatula.
*Add the egg and egg yolk, mix for 2-minutes.
*Slowly add the baking soda and flour.
Add the flour one-cup-at-a-time and mix until combined.
*Add the frozen raspberries and white chocolate chips and mix until everything is evenly-distributed.

*Chill dough for 10-minutes before baking.

*Remember to chill leftover dough in-between baking.

*In the meantime, preheat oven to 350F.
Line your baking sheets/pan with either Sil-Pat mat or parchment paper.
(In this case, I suggest parchment paper because I found it stained my Sil-Pat a bit because of the raspberries).

*Using a Tbsp scoop, scoop out the dough onto the prepared baking sheet/pan.
*Bake for approx. 10-minutes.
Bake them until cookie looks set but a bit soft.
*Remove from oven and let cool on cookie sheet/pan for approx. 1-minute before removing onto a wire-rack.
