Cinnamon Madeleines

Okay so the last of the trio of Madeleines made for Thanksgiving 2012 and they were yummy as well.

If I had to pick a favourite, I would choose this one.  I liked the flavour and cinnamon reminds me of fall.  I love the smell of cinnamon.

Cinnamon Madeleines

1/2 cup (9 Tbsp) butter, melted and cooled to room temperature + more for molds
1  3/4 cup all-purpose flour
2  1/2 tsp baking powder
1  1/4 tsp ground cinnamon
3 large eggs
3/4 cup + 3 Tbsps granulated sugar
5 Tbsp milk
Confectioners' sugar (optional)

*Butter Madeleine molds.
*In a medium bowl, sift together flour, baking powder and cinnamon; set aside.
*In another bowl, using the whisk attachment, beat eggs and sugars until creamy.
*Add flour mixture and milk; mix until smooth.
*Add butter, and beat until creamy.
*Preheat oven 350F.
*Cover with plastic wrap and refridgerate for 20-30 minutes.
*Pipe or spoon batter into molds; halfway up.  Do Not Over Fill.
*Bake until puffy or golden brown; approx. 9 minutes.
*Remove from molds (gently unmold by using a fork at the edge of the madeleines) and transter to a wire-rack and let cool completely.
*Once cooled, dust with confectioners' sugar.

*** Please Note: I use Salted Butter and then omit the salt requested in the recipe.
You should do what you feel is best.
