Another maple recipe.
Once I saw these, I had to make them.
Great maple flavour.
I couldn't stop dipping my finger into the Maple Glaze and licking it.
Yum!
It made 1-medium size log which turned out to an extra long biscotti.
Great for dunking into your coffee, tea, hot chocolate, milk or Olvatine.
The dough was very sticky.
I sprinkled flour onto my counter top and onto my hands to help with the rolling the dough into a log.
Original recipe is from Big Biscotti Bake
Maple Pecan Biscotti
1 cup brown sugar, firmly-packed
4 eggs. large
3 tsp pure maple syrup (or maple extract)
pinch of salt
1 tsp baking powder
2 cups all-purpose flour
1/2 cup chopped pecans (or chopped walnuts)
*(If you prefer, you may toast the nuts).
*Preheat oven 350F.
Line the baking sheets/pans with parchment paper. Set aside.
*Using the paddle-attachment, beat together sugar, eggs and maple syrup until smooth.
*Mix in the salt, baking powder and flour.
Remember to scrape down the sides and bottom of the bowl after each addition.
*Mix in the nuts until evenly distributed.
**Remember the dough will be sticky!!**
*Remove dough from bowl, and place onto the counter sprinkled with flour.
*Knead the dough, and shape into a log.
*Place log onto the prepared baking sheet/pan. (I only made 1-log).
*Bake log for approx. 35-minutes or until the log looks as if it cooked right-through.
It will crack and the aroma will leave you wanting to bite into the log and not waiting for the final product.
*Remove from the oven and let the ``log`` rest; approx. 10-15 minutes.
*Once the log has cooled, using a serrated knife, cut the log diagonally and place the biscotti onto its side on the prepared baking sheet/pan.
*Bake for approx. 6-minutes.
*Remove from oven, turn the biscotti over (to bake the other side of the biscotti) and bake for an additional
3-minutes.
*Remove from oven and transfer onto a wire-rack to cool completely before adding the Maple Glaze.
Maple Glaze:
1/4 cup sifted confectioners`sugar
3 Tbsp pure maple syrup
*Whisk together the sugar and syrup until smooth.
*Drizzle onto the Maple Pecan Biscotti.
