Yellow Plum Loaf

I like this recipe.
It has simple ingredients and it is simple to make.

The loaf came out dense, which I liked.
The plums were speckled throughout the loaf but mostly on top.
Yum.

Great for breakfast or for snacking.

This recipe originally had strawberries instead of plums.
I think you can replace it with any kind of fruit.

Yellow Plum Loaf

2 cups all-purpose flour + 1/2 cup flour to mix with plums
1 1/4 cups (200 grams) yellow plums, cut into either halves or quarters.
1/2 cup granulated sugar
2 large eggs
1 cup (250 grams) sour cream or yoghurt (I used sour cream)
3 Tbsp freshly-squeezed lemon juice
zest of 1-lemon (approx. 2 Tbsp)
a little under 1-Tbsp (7 grams) baking powder (8 grams = 1 Tbsp)

*Preheat oven to 350F.
Line the large loaf pan with parchment paper.
Butter the bottom of the parchment paper.
*Mix the 1/2 cup flour with the plums.  Set aside.
*Beat the sugar and eggs together for approx. 2-minutes.
*Add the sour cream, lemon juice and zest; beat together.
*Add the baking powder and the 2-cups of flour.  Mix until all is incorporated.
*Using a spoon or a rubber spatula, mix together the plums until it is evenly-distributed.
The batter will be thick.
*Put batter into prepared loaf pan and smooth out the top using a spoon or spatula.
*Bake for approx. 45-minutes or until center is done by inserting a knife or skewer
and it comes out clean.
*Remove from oven and let it rest in pan before removing onto a wire-rack to cool completely.
