Lemon Ricotta Cookies

Spring is here.
Summer is approaching.

When I think of spring/summer, I think of lemons, limes and summer fruit.
I love fruit especially baking with them.

I came across this recipe (blog) sometime last year.
It has now become a favourite.
Why?
These cookies are Very Good; even without the lemony-glaze on top!
These are a favourite at work. 
That is saying something considering we have so many different taste-buds at work.
This is a soft, lemony cookie.
Made soft by using ricotta cheese.

**The only thing I did differently is that I use Salted Butter and then omit the salt requested in recipes.


My cookies still look like small meatballs.
I can never get my cookies to look flat and cookie-like they do in other blogs/pictures.
