Pistachio Pudding Mix Cookies

This is the 'other' recipe that I was talking about.

This was an easy recipe and good too.
Until I brought these to work, no one had heard of pistachio cookies.
I am known at work for bring in some very different cookies.
My co-workers are becoming very knowledgeable about cookies.
:)
That is what I want.  I want to be known for cookies and different ones.

I did not tint the cookies.
What I did do is halfed the dough. 
I made one half with white chocolate chips and the other half with milk chocolate chips. 
Both were good.

Pistachio Pudding Mix Cookies

1 cup butter
1/2 cup brown sugar
1/4 cup granulated sugar
1-pkg. Jell-O Instant Pistachio Pudding Mix
1 tsp pure vanilla extract
2 large eggs
2  1/2 cups all-purpose flour
1 tsp baking soda

*Preheat oven to 350F and line your cookie sheet/pan with parchment paper or Sil-Pat.
If you don't have either, then lightly grease your sheet/pan.
*Beat butter and sugars.
*Add the pudding mix, extract and eggs; beat.
*If using green food colouring, add here. 
*Add the flour and baking soda; mix until everything is mixed through.
*Stir in your chocolate chips of your choice.
*Using a Tbsp or tsp (depending on the size you want) scoop onto the prepared cookie sheet/pan.
*Flatten slightly using the back of a spoon or the bottom of  a glass.
*Bake for approx. 10-minutes or until slightly-golden.
*Let cool on cookie sheet/pan for approx. 2-minutes before removing to a wire-rack.


***Please Note:   I always use Salted Butter and then omit the salt requested in recipes.
You should do what you feel is best.
