Funfetti Cookies

Okay, by now you have figured out I really, really like Funfetti.
I have made Funfetti cookies, Funfetti cakes and Funfetti frosting.

How can you not like it?
It is so colourful.  So spring and summer-like.
So, cutsey.  So, fun!

This is basically a sugar cookie with sprinkles.
I have made both the Funfetti Cake Mix cookie and this one....I like them both.
Both have different textures.
Both taste good.
Both look great.
Both are easy to make and take no time at all.

Except this one is the made from scratch.

The sprinkles I used were 'Rainbow Rounds'.

Funfetti Cookies

1/2 cup (1-stick) butter, room temperature
3/4 cup granulated sugar
1 large egg
1 tsp pure vanilla extract
1  1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cream of tarter
1/2 cup sprinkles + more if desired for sprinkling on top of cookies  (I forgot to do this)

*Preheat oven to 350F.
Line your cookie sheets/pans with either Sil-Pat mats (this is what I use) or parchment paper.
*Beat the butter and sugar together (approx. 4 minutes on medium-high speed) until it gets light and fluffy.
*Add the egg and extract.  Beat again. 
*In a separate bowl, stir together all the dry ingredients (flour, baking powder, baking soda and
cream of tarter).
*Slowly add the dry ingredients to the batter and mix until all is incorporated.
Don't overmix.  The dough will be kind of thick. 
*Stir in the sprinkles by using a rubber spatula.
*Using a Tablespoon scoop, scoop out the dough and roll into balls.
Then flatten the tops out a bit.  I do this step by using the bottom of a drinking glass.
*Place the cookie onto the prepared cookie sheets/pans.  Spacing approx. 1  1/2-inches apart.
*IF desired, sprinkle a few more sprinkles on top of the unbaked-cookie.
*Bake for approx. 8-10 minutes.  They will be slightly undercooked.
*Once cookies are removed from oven, let cookies sit on cookie sheet/pan for approx. 8-minutes more before removing to a wire-rack to cool.


***Please Note:   I always use Salted Butter and then omit the salt requested in recipes.
You should do what you feel is best.



**After baking the cookies, I also made them into Whoopie Cookies.
**For the frosting I just used a Vanilla Buttercream.

My favourite frosting is the 1/2 & 1/2 Frosting from Wilton.
