Nutella Biscotti

Did you know that February 05 was National Nutella Day?

Some things in life make sense.

How did we celebrate National Nutella Day?
Our way of celebrating?
Baking with Nutella.
And my son and I decided to bake something together.
I wanted biscotti.
He wanted cookies.
I won.
We also had grilled Nutella sandwiches with blueberries.

The Nibble  lists all the possible National Food and Drink days.
I love National Food Days.

mmm....Nutella Biscotti.
These were so good.
I drizzled Nutella on the tops of the biscotti.
I also spread Nutella onto one of the sides of the biscotti.
None of us wanted to stop eating them.
But I can't just feed my kids biscotti and Nutella, so I had to put a stop to it.

Nutella Biscotti

3 eggs. large
1 cup brown sugar, packed
a little over 1/2 cup Nutella
pinch of salt
2 Tbsp cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
2 1/4 cups all-purpose flour
1/3 cup semi-sweet chocolate chips

*Preheat oven 350F.
Line the baking sheet/pan with parchment paper.  Set aside.
*Beat eggs and sugar together for approx. 8-minutes.
*Add the Nutella, salt, cocoa powder, baking powder, baking soda and flour together until all is combined.
*Add the chocolate chips and stir until all is evenly distributed.
*Sprinkle flour onto your hands and lightly onto the counter top.
*The dough will be sticky.
*Shape the dough into 2 logs the same size.
*Bake for approx. 20-25 minutes or until the tops are cracked and it looks baked all the way through.
The logs will spread.
*Remove from oven and move to a wire rack to cool.  Approx. 15-minutes.

*Once the logs have cooled, using a serrated knife, cut the logs diagonally.
*Place the biscotti onto its side and bake for approx. 6-minutes.
*Remove from oven, and turn biscotti over onto its other side and bake for approx. 3-minutes.
*Remove from oven and place onto a wire-rack to cool completely.

*Once the Nutella Biscotti are cooled, drizzle Nutella on the tops of the biscotti.
Or spread Nutella on the side of the biscotti.
Whatever you want.
Or dip the Nutella Biscotti into the Nutella.
So many combinations...
