Eggless Pancakes

Every Sunday we have a big breakfast.  Things are a little more relaxed on the weekends, especially Sundays.  Or summer vacations.

We wanted to make pancakes but then I noticed I was out of eggs.
What? Out of eggs?  What do we do now?
I was too lazy to go to the store.  Let's search www.foodgawker.com and see what we can come up with.

I must tell you this is our favourite recipe.  We use it every Sunday and sometimes during the week.
Simple, fast, and flavourful.

The only thing I must tell you is that it doesn't yield a lot.  Or it least it doesn't for our family and      + we are big eaters.
We either double or triple the recipe, depending how hungry we are.



Eggless Pancakes

1 cup all-purpose flour
1 tsp sugar
1/4 tsp ground cinnamon
2 tsps baking powder
1 cup milk
1 Tbsp oil (I use canola oil)
1 Tbsp water
1 tsp vanilla extract
2 Tbsp butter

*Whisk together all dry ingredients
*Add all the wet ingredients to the dry ingredients.  Do NOT over-mix.  (Lumps are okay).
Set aside.
*Heat griddle or pan at medium-high heat.
*Once the griddle/pan is hot, add a bit of the butter and let melt.
*Add the rest of the butter to the batter, stir.
*Pour a ladleful of batter on the pan for each pancake.
Cook until bubbles appear and flip and cook until golden-brown.
